But, do we realize how much food is being wasted? Yes, our country is one in the list that wastes food on a large scale! Although this has to be controlled, big restaurant chains have come up with a sustainable idea that will keep their business alive in various facets. To get the cooking going, these food wastes are managed and being fed into biogas generators.

Let us see how it has a huge impact on waste management system.

From our plates to the biogas plants

With tons of food being wasted in a day, the biogas generated from these waste materials is in large amounts. This will be more than enough for the hotel kitchens to cook and heat the entire day. To Generate cooking gas from the waste in large scale, is done is three phases. Once the feed is given into large scale biogas plants like VNS Enviro’s “Bioigniter”, the first phase they undergo is hydrolysis (breaking down into fine particles). With pH adjusters, the condition of the generator is set to an optimum level. This in turn, will guide the methanogen and acetogens (bacteria) to act on the waste materials. Also, the temperature is pre-set for these stages to function optimally.

Finally, they conclude at producing gas that is rich in methane. Since the biogas is produced in large scale, not only it can act as an alternative fuel for cooking, but also can provide the power to generate electricity!

For instance, many restaurants say that biogas plants can supplement 35% to 50% of their each day LPGs use. This makes the former option more viable when considered on both economic and ecological factors.
